Description
This wine is made from 100% Monastrell, from vineyards with a production of less than 1.5kg. per vine, the grapes are harvested in mid-October. Vinification is carried out in the traditional way, leaving the skins in contact with the must throughout the alcoholic fermentation. This lasts about 14 days with short pumping-overs and controlling that the temperature does not exceed 24ºC. Subsequently, malolactic fermentation takes place and the wine is aged for a minimum of four months in French and American oak.
It is perfect to accompany any meat dish or even oily fish, offering great versatility.
